Understanding Beef Grades

Not all beef is created equal. USDA beef quality grades help describe characteristics such as marbling, tenderness, juiciness, and flavor. Three of the grades consumers most commonly see are Select, Choice, and Prime.

Select Beef

Select beef has the least marbling of the three grades. It is generally leaner, with less intramuscular fat running throughout the meat.Because there is less marbling, Select beef typically delivers a milder flavor and can be less juicy and tender, particularly in steak cuts. Careful preparation, marinades, or slower cooking methods can help maximize tenderness.

What to expect: Lower level of marbling, Leaner eating experience, Mild beef flavor, greater risk of becoming dry when overcooked.

Choice Beef

Choice Beef represents a step up in marbling from Select and is widely available in grocery stores, restaurants, and butcher shops. The additional intramuscular fat generally provides better tenderness, juiciness, and richer flavor. High-quality Choice beef can provide an excellent eating experience, although the amount of marbling can vary considerably from one cut or carcass to another.

What to expect: Moderate marbling, good tenderness, more juiciness than Select, Richer beef flavor, Excellent everyday steak and roast quality

Prime Beef

Prime is the highest USDA beef quality grade. Prime beef is distinguished by its abundant marbling—the fine flecks of intramuscular fat distributed throughout the meat. As the beef cooks, this marbling contributes to the steak's rich flavor, juiciness, and tenderness, creating the premium eating experience associated with high-end steakhouses and specialty beef programs.

What to expect: Abundant marbling, Exceptional tenderness, Outstanding juiciness, Rich, buttery beef flavor, Premium steakhouse-quality eating experience.

The Fossil Rock Farms Difference

At Fossil Rock Farms, we strive to produce the highest-quality beef possible. That pursuit of quality begins long before our cattle ever reach processing. Our cattle are bred, born, pasture-raised, and grain-finished on our farm, allowing us to maintain our standards throughout the entire process. From carefully selected Angus genetics and nutrition to pasture management and finishing, every decision is made with the goal of producing beef with exceptional marbling, tenderness, consistency, and flavor. Our goal is to produce Prime-quality beef, but we believe premium beef is about more than the grade printed on the label. It is the result of genetics, animal care, nutrition, responsible farm management, proper finishing, processing, aging, and attention to detail from beginning to end. We also dry age our steaks for a minimum of 14 days, allowing natural enzymatic processes to help improve tenderness and develop the rich beef flavor our customers expect. As you move from Select to Choice to Prime, the amount of marbling generally increases—and with it, the potential for greater tenderness, juiciness, and flavor. At Fossil Rock Farms, we don't simply strive for a grade—we strive to produce the highest-quality beef we can raise.
